Sockeye is the richest and most robust of Salmon, known for its firm deep red flesh, as Pink Salmon is a wonderful mild taste.
The smoked filet is trimmed or portioned and packed into a gold foil retort pouch under vacuum.
These retort pouch with the salmon in it is then heat processed to ensure preservation and shelf stability without refrigeration.
