About our Company and Our Products Nature’s Best Smokin’ Joe’s Smoked Salmon starts with only the highest quality wild pacific salmon. Caught in the cold pristine waters of the coast of British Columbia, Canada, the salmon is carefully handled to arrive undamaged and fresh at our local fish processing plant here in beautiful British Columbia. Depending on size of the annual salmon runs and the time of year, you may be able to purchase different salmon species such as Chum, Pink, Spring/Chinook, Coho, or Sockeye. While the five species of wild BC Salmon share an outward resemblance, they are distinctive in flavour and vary greatly in flesh colour. Their flavours run the gamut from rich and full to light and mild. Sockeye, known for its deep-red, firm flesh, is the richest and most robust. By contrast, chum and pink are milder and more delicate while their flesh is lighter in colour. Even within a species, the flesh colour can vary considerably. The firm flesh of richly flavoured Chinook, for example, can range from ivory to deep red. The choice is yours. Whether you prefer a robust flavour or one milder and more delicate, there’s a salmon to suit your taste buds to a tee. Naturally nutritious and delicious, high in useable protein, low in saturated fat and cholesterol, wild salmon is ideal for the diet-and health-conscious. Not only that, but salmon is a good source of polyunsaturated omega-3 fatty acids, the “good fat” which medical research indicates may reduce the risk of heart disease. PackagingDon’t forget retort packaged salmon – it provides the same health benefits as fresh salmon. The Process Gold foil or “retort” packaging is a newly invented way of processing the highest quality of smoked salmon. It allows the provision of a first class product with a shelf life of five years lending itself to distribution anywhere in the world. “Retort packaged” smoked salmon is a specially selected high quality fish that has been hand cut and slow smoked through a cool/cold smoking process. The smoked filet is trimmed or portioned and packed into a gold foil retort pouch under vacuum. This retort pouch with the salmon in it is then heat processed to ensure preservation and shelf stability without refrigeration. The resulting product has been cooked in its own juices to create a succulent seafood treat. Although this is smoked salmon, the heat processing has altered the texture so that this is a new, unique gourmet product unlike lox or any of the other smoked salmon products-all of which require refrigeration. This product makes a fine addition to the finest of tables and yet is an excellent addition to the menu of the outdoorsmen. Either way it is extremely tasty, affordable, and convenient. Packing and ShippingFrom the ocean to your table, Smokin’ Joe’s smoked salmon has been handled with care. The salmon is packaged in fillet form and has been handled very carefully to ensure that it arrives as a whole fillet. Although the retort package is robust it is recommended that the package be handled carefully to avoid flaking of the fillet.
